newbie question

Hi,
I am curious,I seen some shots from Glen ,not only him but
many of you are using slow motion, but not just to slow down
the time but something like shot freeze with zoom together.

Is this usually done as time remapping in Premiere or AE??
Is there any good tutorial for that??

Sorry for this kind of basic question
