Mobile edit suite

I am preparing to sail extensively offshore and will be documenting much of the voyage. I shall be using a Sony XDCam EX1 and will need to offline much of my material while underway.
Could someone please advise me as to what you feel would be the most suitable platform in this regard. My yacht is small and thus a laptop system is required.
I am also concerned about moving my Avid Express HD onto a laptop as I have had scant advice from Avid as to which of the latest laptops would operate best. I would be happy to change editing platforms if needs be.
Any advice on editing platforms, laptop hardware, etc. would be appreciated.
