But first, set your Copy All target in Content Browser => Preferences => Edit tab.

Just tested it. That certainly copies the entire folder structure and files. MXF isn't usable by FCP7 though. Edit: Nor FCPX evidently.

With XDCAM Transfer, it seems way easier than this. Load SxS, choose location in Preferences, select clips, click Import, MOV files are there. Browser should be as intuitive. What on earth am I missing?

MXF is directly supported by FCPX, yet I am using it. Apple has the official solution here:
Final Cut Pro X: Importing Sony XAVC, XDCAM, XDCAM HD, and XDCAM EX media
Content Browser is not needed anymore. No more words.

Anthony: you asked how to copy your SxS cards to the hard drive, which I explained how to do.

From there to import the media, you need to IMPORT the media, which then prepares .mov files in XDCam EX or HD codec (depending on which camera and bitrate) for Final Cut.

NEVER import media directly from cards - always transfer to your hard drive first for backup in case something happens to the media files.

From FCP 7 (if that's what you are using), choose File => Import => From Content Browser (I believe... I'm not at my edit computer) which opens Content Browser. You can individually Log and Transfer files with in and out points by clicking on the clip in the Explorer and setting in and out points in the Preview and then clicking to Import Into Final Cut Pro OR else you can Import all files in the directory in the Explorer by slecting all (or the ones you want...), right clicking and choosing Import Into Final Cut Pro and following the dialogs.
