For a good "lecture" about what all this means, I can recommend "Demystifying Digital Camera Specifications" by John Galt and Larry Thorpe at the Panavision Screening Room.

FreshDV also publishes these on their website in a more accessible Flash format. The Panavision site has HighRes QT versions available.

For shooting fast action (kids) try 720p60. Some networks that are sports oriented use that over 1080i60.
