What picture profile/knee point to use

I've got the FX1000 and use it only for weddings. The highlights keep blowing out, what picture profile & knee point do you suggest I use. Right now I have it set for "portrait" & "middle" for knee point.

Thank you in advance for your help & recommendations.

I do "live" stage video with the same potential problem. I set the autoexposure to a "minus" value using zebra to find the best setting. I use this and then make any final gain adjustments in my editing software. This way I can control the highlights.
