How do I shoot "flat" on the FX1?

What are the best camera settings to use if I want to shoot as flat as possible (low contrast, low saturation, low or lowish sharpness), to be able to have maximum flexibility for color grading in post? Ideas?

I'm assuming we're talking the best picture profile settings.
