What exactly is zoom handle and how does it work and in what situation would you use it?

Not sure but you may be talking about a handle for a tripod head with built in LANC controller such as this

if so this handle replaces the standard handle on the tripod head and allows you to control the camera (zoom, focus, start/stop,..) from the handle
