screen capture sofware

I have seen softwares that will capture any activity on your computer. What are these called?
I need to capture browsing a sofware but i dont want to show the side menues so if i just export out of S-video, and blow it up i will get pixelation.

any recomendations?

The Windows Media Encoder (free) has a screen capture utility. Camtasia and I believe Snag-it will do the job for a price. I've used Camtasia for years and provided you aren't trying to capture game frame rates it's a great tool. For software tutorials you can't beat it.
