custom xeon pc? 2duel or 1 quad?

i was configuring a hp work station. one had 1 quad core 2.66 processor quad is 4x2mb FSB price about 2700

the other had 2 dual core 2.33 processors FSB 4mb and the price was about 2500.00

what would the performance differences be? what would be better for video editing.

what would you choose?

thanks

Are they both dual socket systems? If so, buying the single quad cpu now allows you to upgrade with second one later. If not, dual socket motherboards will usually be more "professional" and stable. (More PCI and PCIe buses, etc.)
