I normally balance using a Lastolite card using the grey side, and ensuring the histogram shows the card roughly centred in terms of exposure.
If the scene is trickier due to mixed light sources, I may also film my SMPTE One Shot card as a reference for the editor. For pack shots on commercials I use the One Shot card in every setup.
