Some very basic (Template) questions

I am capturing from an HV20. Does it matter what template is used for capture.

When are the project settings going to affect me, capturing, editing, burning?

What template should I use to capture mp2 and edit keeping the fidelity I already have (HD). The "match media" option, gives me a
1080 60i. Full Resolution defaults to good.

Should I use a different template?
Should I change any template settings:
Field order
Pixel format
Full resolution ( I think I should set it to best )
De Interlace
Frame rate
Or just accept the ones that the template offers me?

During prerendering; which formats should I use: .avi or MPEG-2 and if MPEG-2, then what extension?

For archiving I assume my I render the whole project to a new file. Would that be .avi or .m2t?
A possible final use would be to burn HD DVDs.

Thank you for any help you can offer to this very new guy.
