Integrating film clips off dvd into doc at DVinfo.net

I’m making a doc combining public domain movies off dvds with live action (avchd).
Please be so kind as to comment on this flowchart:
Timeline in FCP7: prores 422 / 1920x1080 / 23.98 fps
Using HANDBRAKE off dvd > High Qual H264
Then MPEG Streamclip — Prores 422 @ 108i
(rather than 720p or unscaled — Do I want to de-interlace?)
Then restoring image to original shape using motion in FCP7.
(Also, using FCPX to convert out of camera AVCHD material to MOV. > FCP7)
