Got a new MacBook Pro..

What would be my best options for hard drives? I'd like to use a raid of some sorts.

Greg,

A simple FireWire drive would certainly get you started. RAID can be a good thing, but do you know what you really need? Otherwise, it's an expensive option with potentially no or little benefit.
