HD to SD DVD on a Mac... best workflow?

What is the best workflow to create high quality DVDs on a Mac? I want to setup a test with Compressor, Adobe Media Encoder and Sorenson Squeeze 6. What are your recommendations to setup such a test? What would be the best starting point? I assembled a timeline with HD clips from ArtBeats and rendered them out to their native format (JPEG 2000). Is this a good starting point? Should I export as ProRes first? What are the maximum bitrates stand-alone DVD players can handle? Any other thoughts or considerations?

I also read about a workflow via a PC with AviSynth but I am Mac only and do not own a PC.

The starting point is 1080p footage which I edit in Final Cut Pro.
