how to set shutter and iris

In other words today I filmed 3 horses and I set it to the tv mode , howver you can't adjust the iris in this mode . So i would get the exposure and lock it.
Isn't there a way to adjust Iris and shutter or is that just masnual setting ?

Exposure Lock. It allows you to basically shift into manual mode while in A,Tv, or Av mode. Both iris & shutter are available for adjustments.

That's right. Tv mode plus Exp. Lock equals full manual control of shutter and iris.
