Icecube/cigar HD camera and recorder

I shoot for a racing motorcycle design firm, and I want to get some HD onboard footage on the bikes. In the past I've used an SD helmet cam connected to a camera or clamshell deck, but now that things are going to HD, I'm trying to find a way to capture at a higer resolution (and framerate)

What I'd like is 720P60 capture from a small ice-cube or cigar cam shaped camera wired back to some sort of HD capture device.

While at NAB I found a camera head that would work, it's made by Freunhaufer, it's a CMOS 2/3" C-mount HD camera that can capture 720P/60. The problem is it outputs HDSDI, so I don't know how I could capture that data in a portable fasion. If it were not on a moving motorcycle, I would use an HDSDI capture card to a RAID on a computer...

Anyone have any ideas?

Also, would there be a possibility of using a machine-vision type camera head instead, as they might be cheaper?
