documentary sound recording options

I am starting to shoot a documentary and have been using a DVX100B but am now realizing that I will be using mostly the sound from the footage with other images playing over the interviews. So...it is really a waste to be filming these instead of simply recording the sound. I am looking for a low-budget suggestion on how to do this -- one that will make it easy to transfer sound files to FCP for editting.
