What does the knee mean? 100 vs 108 percent? What do these each mean? What about these numbers in terms of white clip, I don't really get it...

Can someone tell me simply/ in laymans terms what setting the knee to 100% vs. 108% will do?

This is setting the clipping level rather than the knee.

100% is peak white, which is max video level that a transmission system is meant to carry. They have a clip which cuts off any signal that goes above that, although 102% seems to go through OK. Video cameras have a clip built in and the level of this can be set by the user.

By using a clip of 108% you're carrying a bit more highlight information into post production where the colourist can make a considered decision on the best way to use it. However, they'll have to ensure they produce a broadcast standard video output that won't cause difficulties in the transmission chain.

The 108% is useful if you're planning a film out.
