F stop settings with little to no Grain?
 

I think this is a loaded question, I am looking to have my image be clear and well lit. However, I do not want to have a blurred background when im shooting at an 2.8f or 4.0f. So... what settings should I change on the camera to make my center point and background in focus but not lose the low light abilities? Is there a medium play ground?

A wider angle lens will give you more depth of field at the same aperture.
As for gain, or ISO setting, it depends on how much noise you're prepared to accept. There have been folks on this forum shooting at ISO 5000 http://www.dvinfo.net/forum/canon-eo...low-light.html

The lenses we currently own are:

24-70mm f2.8 (assuming this falls into the 50mm range)
85mm ( possibly not a doable lense?)

I was also thinking about picking up the new 70-200mm ESU?

1/3 chips video camera is better if you want deep dof in low light.

It also depends how far your subjects are from the background of course. You can try an online depth of field calculator, that'll tell you how much dof you'll get for each aperture at a given focal length and therefore how close to the background the subject needs to be, eg Online Depth of Field Calculator
