I have a first meeting at the end of next week with a cosmetic surgeon who
has a couple of web site video projects in mind for a site redesign. I'm
told that one of the jobs involves shooting "procedures", by which he
apparently means work on patients. Are there things particular to working
in a medical environment that might be helpful to know going into this meeting?

One thing that comes to mind is that if you're going to be shooting in an operating theatre all the equipment taken in will likely have to be certified as safe for use in an atmosphere containing explosive vapours. If you're going to be recording sound, wireless mics would be out of the question due to their potential for interference with medical monitoring devices.
