Hello,
I am a bit confused about how everyone hooks up their external monitor to their computer. Premiere Pro 1.5 will only output video through firewire...correct? So is this converter more or less what Premiere users connect their monitors with:

Is S-video good enough, or would I want to use BNC?

Thanks,

BNC and RCA are just different kinds of physical connectors. You can get adapters to switch between then. BNCs are harder to accidentally detach from a monitor.

2- You can use a normal DV camera to connect from premiere to a monitor.

The Canopus can have an advantage in that it should output black level at 7.5 IRE (North American NTSC standard) instead of 0 IRE, which is what most DV cameras do. If you aren't mastering onto analog formats, you don't need this. Just calibrate your monitor.

3- With composite connections, you can see cross-color artifacts and/or reduced resolution (you can set your monitor to get increased resolution at the expense of cross-color artifacts). This is not bad since you can monitor for cross-color artifacts, which you won't see on the S-video connection.
