I find the simplest (and cheapest!) way is to use virtualdubmod (http://sourceforge.net/project/showfiles.php?group_id=65889)

Open the vob directly, and then use 'streams' - 'stream list' - 'demux' - save the AC3 track -- done!

DVDxDV is also a very handy program that allows you pull sound and video off dvds. its also not expensive.
