I know, I'm very much a noob with this great/awesome camera. How do I shoot in different shooting modes where I can undercrank and overcrank? I only know how to switch it from interlaced and progressive.

Hello Michael,
Recording set-up will get you into your different modes, 1080 60i, 1080 30p, 1080 24p. 1080 24pA, 720, 60p, 720 30p, 720 24p, 720 30pN, 720 24pN, 480 60i, 490 30p, 480 24p, 480 24pA....Did I forget any?
Start testing with 720 24pN, this is the native mode and will allow the most recording time on a P2 card.....
Go to CAMERA MENU>SCENE FILE>OPERATION TYPE>select FILM CAM
then FRAME RATE>you can select 12,18,20,22,24,26,30,32,36,48,60 fps
DEFAULT is 24 fps in the 720 24pN mode...
Shoot at the different frame rates and experiment....

Note that to do longer interval recording, you need to put the camera in video mode. Hopefully they will integrate interval recording and 720pN in the next version. Currently, you need to jump through too many menu hoops to go between undercranking and interval recording.
That said, these are GREAT features. They're worth the trouble of reading the manual and navigating the menus.
