Hi, i will shoot a documentray alone,Yes, only me, no crew.
I have JVC GYHD101E with the mic comes with camera or/and a Azden shotgun on ch2 XLR.this is mount on camera
then i have M-audio multitrack for interview and when i need a better sound.i bring the recorder with earphone to monitor.

my cocern is i have nothing to download the CF card and since i will record sound in mp3 on DV Tapes.
is it OK to record all in mp3 so i eliminate the conversion later?

Are you sure the camera records MP3? The HDV specification is MP2 while DV is uncompressed 48kHz PCM.
