Hi - With a 1tb internal, does it make sense to copy SD cards to it (in the field), then edit internally, then backup to an external? I have USB C SSDs, but I hate how USB C plugs slip out - especially editing in a car. Is the M1 Pro finally fast enough to make internal editing viable?

When traveling I always load the clips to the internal SSD for editing then offload to external archive storage. You just need to make sure that you have lots of free space on the internal SSD. From what I have seen the M1 Pro will be plenty fast enough.

Also if you do an Amazon search for thumb drives and SSDs and then compare the read write speeds you will see a difference.
