Will a 75mm head work on a Sachtler Eng 2 100mm tripod with an adapter like this, E-Image 100mm to 75mm Bowl Adapter EI-A17 B&H Photo Video ?
The Sachtler version is $200 which seems a lot.

No reason why it won't. People will bring up that the tie-down clamp knob must be able to clear the tripod legs during fold-up etc but for a 100mm tripod I doubt that's a problem.

Owen Kilgour...I use a 100mm to 75mm adapter plate with a Sachtler FSB-8 fluid head and a Sachtler CF-100ENG HD 2 CF Carbon-Fiber Tripod. I also use the same 'adapter plate' with a Gitzo G1325, Mk II Carbon-Fiber Tripod to mount the FSB-8.
I've found all iterations of this set-up to be solid and stable.

Owen Kilgour....I believe I purchased this kit from B&H - Sachtler Adapter 75/100 75mm Ball Base to 100mm Bowl Adapter B&H # SA3906 ■ Mfr # 3906.
It's expensive (Sachtler's name, right?), but it includes a modified Tie-down knob and bolt. The piece is well machined with precise tolerances, just like everything Sachtler makes.
I purchased the adapter with the Sachtler CF-100ENG HD 2 CF Carbon-Fiber Tripod. I didn't have a 100mm tripod head, yet, and wanted to be able to use the tripod with my Sachtler FSB-8.
It looks a little funny with the FSB-8 mounted, but it works fine.

Benro also makes a 100mm to 75mm adapter ring. might be cheaper.

There are several much cheaper options, i just don't have a way of verifying if they will work. Also, i may need the longer tie down bolt that comes with the Sachtler adaptor.
