I am in charge of reproduction historic clothing at Conner Prairie Interactive History Park in Fishers, IN, and I've made some very simple videos of historic sewing techniques. I joined because I'm trying to find a good way to video my hands by myself. So far, I haven't put in the right terms in search engines.

Welcome to the forum and hope you find some sensible answers to your questions.
A tripod and a camera with a screen you can use for self view will help you or even better an external monitor with reverse scanning, or find a friend to help you film such close up work, a wide angle lens will also help as it will allow you to get the camera very close and keep everything in focus!
