Practically all of my output to clients so far has been on SD DVDs. But now I have a client who would like their videos on a data DVD to post on YouTube, etc.

What format, etc. is good for this? What compressor settings?

I'm shooting with an EX3 at 30P.

Any advice, or can you point me in the right direction?

Are you in FCP 7?

Go to File> Share>YouTube

Uncheck the 'publish to YouTube' box, set your destination, and off you go.
Burn that file to DVD for your client.

I've also had very good luck with the "stock" compressor YouTube setting.

FYI- I set up a Cluster with QMaster which has really helped speed up encode times on my 8 core Mac. I set up four instances in QMaster, was afraid to do any more than that.
