Does the T2i have any form of video out for monitoring during recording?

Yes. I believe it has an hdmi output.

The HDMI output is HD resolution during monitoring, but switches to SD resolution during recording.

Anyone know of a cheap HDMI to composite adapter?

Doesn't the T2i have composite out too? The 5D2 has an AV output via a 1/8" TRRS jack. The 7D's AV output is via a proprietary connector. Is this feature missing on the T2i?

No it's not missing... I believe it's the same as the 7D (although I'm not sure, I've never used a 7D).

The T2i has a composite output, but it uses a mini-USB to component RCA cable (comes in the box). You can't use the composite out and the camera's LCD at the same time though.
