Perhaps I'm using the wrong name for the device I'm looking for and that would explain why my searches are thus far fruitless but...

I'm looking for a camera mount that can be clamped to a variety of things but most importantly bars and lighting and stage rigging. For example if I need to get a particular view at a live show I'd like to be able to clamp a camera onto stage gear that might be different from show to show.

Can anyone enlighten me as to what I'm looking for or perhaps point me towards some examples?

B & H Photo Video have what looks like what you are looking for. It is called the Ultrapod Ultra clamp assembly. I guess it would all depend on how big and heavy your camera is though. you can see it here.

Another option, that looks a bit more sturdy is a grip clamp. The stud is for a light but you might be able to rig a camera mount to that stud.
