I've use -DVD for quite some time without any problem but recently I purchased +DVD for the first time but it only play on one of my DVD player which I have purchased recently. The other 2 are about 4 years old that wouldn't play at all.

Because the business that I'm in and I have no idea what DVD player my customer has would you recommend -DVD or +DVD?

I was looking for a chart I recall seeing some time ago that stated the DVD-R were slightly more compatible (~94%) than were DVD+R (~89%)?

I personally swapped from DVD+R recording to DVD-R due to compatibility issues on specific players that were corrected when I wne to DVD-R

I once had a customer whose dvd player would only play
DVD-RW format and bought commercial discs. I now use either +rw or -RW and find that they play in the majority of players. Also it has the benefit that if for any reason something isn't quite right for whatever reason you can re-record over it, saving money.

Be ready to deliver the finished work in 2 formats. The two I use are -r and -rw. This seems to have the bulk of the set top boxes covered.
Big box retailers with large quantities of one time sale part numbers of cheapie dvd players are to be ignored. The client will know they have purchased one of these dogs and will sheepishly trot out to find a proper brand name and use the old one at the cottage.
