Does anyone have any suggestions on what I would do to a regular kids voice to make is sound like Mickey Mouse? I tried to shift the pitch up and it just sounds like the Chipmunks.

Mickey's voice isn't an EQ/effects trick.

After the "pitch shift", try boosting your midrange with a parametric EQ. Also, you might try slowing the audio down slightly...Mickey spoke slowly, compared to today's cartoon characters, and was always the more deliberate, thoughtful Disney character...
Slowing the audio slightly should get you out of the "chipmunk" range and closer to Mickey's style.

The TCI-Helicon VoicePro will do what you want and then some.
