Hi everyone, I have been in the industry for 2 years now. I own A Canon XH A1. I know and understand my camera very well, I only use the Manual function on the camera.
I have also shot on 16mm film.
You only know how to use a camera if you understand film.

Nice video, but as James suggested, you may want to set up an account on Vimeo or Exposure Room. Their video quality is much better.

Gamma is a measure of the amount of contrast found in an image according to the properties of a gradation curve. High contrast has high gamma and low contrast low gamma.

Master Ped sets the black level of your video signal.

H DTL FREQ controls can help adjust image noise that may occur if you have a lot of strong vertical or horizontal lines in the frame.

Coring has to do with the noise level in your video. Canon explains this as "For adjusting the subtle noise components on the screen. When the cursor is moved in the + direction, the noise becomes less noticeable. When the cursor is moved in the - direction, it becomes more noticeable." But, unless you're increasing your gain or are really tight in on something with contrasting colors, you probably wont need to adjust this much.

Color phase is the phase of the chroma signal as compared to the color burst, it is one of the factors that determines a video signal's color balance.

The matrices are basically for tweaking or pinpointing color matching.
