Theres a DOF calculator at this site.

can someone give me a real quick rundown of what this means?

With the lens focused at a subject a certain distance away with a lens of a certain focal length and fstop, and a certain allowed CoC (circle of confusion), it will give you the near and far acceptable in focus range for that CoC.

How can I relate this to achievinfg a shallow DOF on a shot?

If you've not already done so, see the extensive "Ultimate DOF Skinny thread (http://www.dvinfo.net/conf/showthread.php?s=&threadid=3926).
Also note that the Panavision calculator is designed to deliver results for prime lenses, not zooms.
