Hi :)
I was pretty sure, that I managed to do that. Or was it only with the Z1 before ...
Anyway:
I want a microphone in Audio1 and then record that to Channel 1 and 2 simulaneously.
What's the correct menu setting for that ?

Menu > Audio input > Ext Ch Select CH-1 (records to both channels from input 1), what you want.
CH1/CH2 records them seperately, not what you want.
Page 102 of the manual, for EX1 anyway.

But that's exactly what I did. And it only records on Audio 1.

Make sure that Channel 2 is set to the same input as Channel 1. I had this problem before and realised that Channel 2 was set to Line and not Mic...

Can you then adjust the levels independently? I like to have the same source recorded one channel hot and the other lower in case there is clipping. If so this is a great feature.
Previously I'd used a XLR splitter.

Sure you can, even other audio settings ( limiters) are operational.

The only reason that I'd consider recording the same audio to two different sources was if I could lower the gain on one of them about 5db so that I avoid clipping... why not just record to one audio source and simply set it to mono in post?

Just set both volume controls to manual and set one slightly higher than the other, i'm talking about the trim wheels on the back of the camera.
