Always loved the colour quality of the HPX500 and other DVCPro cams.
Some burn out on the flowing water, wonder if you could keep the exposure down during shooting to control the whites and bring up the rest in grading? Are you using factory settings? Check the BBC site http://www.bbc.co.uk/rd/pubs/whp/whp-pdf-files/WHP034_ADD26-Panasonic-HPX5003.pdf that has settings for various pro cams. Not sure about this one for the HPX500, but certainly the settings for Varicam and the HDW Sonys give a big improvement in dynamic range, about 2 stops.

Solid! But yeah highlight clipping is always the trick on digital. It can be mitigated with a nice monitor with vectorscope and waveform capabilities. Also ND filters and polarizer. With the HVX, work with the gamma settings. Finally, erring a bit on the side of underexposure can make the difference.

It's a lot easier to correct for in post than blown-out highlights. Though some plugins I've seen out there will even help those out a lot. For example, check out Captain's Blowout Fixer:

Right, FCP for editing. Used P2CMS on site to pump out of the 32gb cards, brought into FCP strait from Log and Transfer, exported out to a regular QT movie for the web, QT export to an H264 HD res (1280x720) file for Vimeo. Nothing special.

The DVD was ran back through FCP and broadcast safe was popped on it, exported and ran through Compressor, dumped into DVDSP and burned off that way. Again, nothing special.
