I have a Sony wide angle .8 on my EX3.
But it shows my mattebox edges when full wide.
Would a .75 be less wide or more wide?

A .75 would be just a little wider.

0.8 means 20% wider
0.7 means 30% wider
0.6 means 40% wider
0.5 means 50% wider.

0.8 means 20% wider

0.5 means 50% wider.
Sorry to be a nit-picker, but this is not quite correct if you are referring to field of view. 0.8 is 80% of the focal length and would be 1/0.8 "wider" or 25% wider if you want to talk field of view.
0.8 1/0.8 25%
0.7 1/0.7 43%
0.6 1/0.6 66%
0.5 1/0.5 100%
