Hi, I have to provide some footage that is rendered out to :
"MPEG2-DVD which is an M2V File"
Which settings would I use for this?

Thank you. I will try that. I thought I saw m2v files somewhere else too though...can't remember where.

An M2V file is an MPEG2 file. You can probasbly find it under there also.

Would I just rename the extension?

As far as I know if you select a template for DVD architect and then choose the custom tab. Click on the system tab and select the check box beside " Save as seperate elementary streams" which will then create an M2V file and an MPA file for the audio.

No.
The reason is a M2V file is supposed to be a MPEG2 video ONLY file, no embedded audio whatsoever.

Also know as program stream or mpeg split file with Video.m2v or Audio.m2a. Premiere CS3 media encoder can be done.
