I remember reading something about some minor problems with a first generation EX-1's ... (some early serial numbers?)
I have the opportunity to buy a brand new EX-1 or a demo unit from my dealer. Are there something I should look for before buying a demo?

The main problem was the vignetting issue, it is pretty well documented.
I would ask a day with the camera to put it through its paces. And make sure what the warranty is. Sony Prime Support usually starts from the date of the end-user invoice; I'd make sure that still applies.
Possibly you could make arrangements with your dealer to exchange it for a new camera (at the difference in cost) within lets say a week if you happen to find fault with it.

Can I look for a specific serial number, from where the vignetting issue was solved ??

There are some serialnumbers mentioned in the vignetting thread as well as the serial number thread, but remember these were incidents. I'm sure many cams did not have problems.
For a demo unit I would not expect it to have issues as that would make for a bad demo... But best you check. There are details on how to in the threads.

i have serial number 3. No Vignette issue and if there was easily fixed.
