Is it a dream that I could have the exact display come out of my composite and show on my lcd. In other words, well, the exact display, or is that only for the lcd on camera which shows rec/audio levels etc. I'm using a sony v1 and z1.

There should be a menu setting that will allow you to choose whether or not to output those display elements to an external monitor.

Yeah, I found that menu item, and there was no change. I'll hack at it some more. I just didn't know if there was a specific issue with the stock monitor or not.

I'm still settling into the Pilot, but right now my favorite mode is to use both LCD screens (camera & Pilot). The one on the camera shows all the info I need, and I set the 5.8" LCD on the Pilot to be just pure video. This seems to keep me more focused on the shot when I'm moving around a lot, but I can also glance up at the camera LCD to check things when I'm not moving so much.
